    1. You can make a runny ganache by simply adding more cream. I’d say start with equal ratios, then, add more cream to get the consistency you need

    1. You definitely can Rachel if the consistency and conditions (temperature are right. The consistency will need to be tweaked for every project until you find that sweet spot.

  5. Hi, which ganache is best used under white fondant. I did try white ganche but it started to go soft when I was smoothing out the fondant. Could I use dar chocolate ganache under white fondant. thankyou

    1. Hey Angela. Yes, white chocolate is cocoa butter so if you live in a place that is warm the cocoa butter softens easily. Dark chocolate stays firm longer.

    1. Hey Kaye, I like to use 2 parts chocolate and 1 part cream for my truffles because it is very hot and humid here in Israel.

        1. You can cover any cake with ganache Sharen as long as you know how. For example, a chiffon cake is very soft, light and airy so the ganache used must be soft smooth very spreadable consistency otherwise it will flake away the cake when spreading. I hope that makes sense. So either you use the ganache with more cream or use the ganache fresh when it is still very soft in consistency. Thanks

    1. Yes, Ronit. You can paint on it. Make sure to chill it thoroughly so it’s firm enough to paint on.

    Thank you for this article! I was wondering if this ganache will harden a lot when put on a cake. I want to paint a cake, but for the result to be as pretty as possible I need the frosting to get hard. Just like buttercream.

      Yes, Saloua, this is a very firm ganache but how hard it will get depends on the place you live. In Israel, we have high humidity so it is not as hard as it can get in the US cold weather.

  10. Hi, the measurements given for the bandage for a round 6 inch cake, is that for a layered cake (3/4 layers)?

    1. Not sure I understand your questions – what do you mean by bandage? But, yes, the measurement given are for layer cakes but it still depends on how thick or thinly you frost your cake.
