Snack bars are great, but not when they are loaded with sugar. These sugar-free granola bars are made with honey and a secret ingredient you normally never use in granola.

Today, I want to share with you one of my favorite snacks. I love granola and I can eat granola parfait for breakfast or dinner. These are similar to eating granola but as healthy granola bars instead of in a bowl.
The best thing is that, unlike store-bought granola, these bars are not loaded with sugar or erythritol. In fact, we add just a touch of honey for a little sweetness.
Why make these granola bars
- The main ingredient in snack bars that holds everything together is sugar. But, in this recipe the secret ingredient is egg whites. It's the egg whites that hold all the nuts, oats, and seeds together.
- We do not use sugar, we still use honey, but you can also use maple syrup or agave syrup for sweetness. Of course, you can also omit the sweetener altogether, but it won't taste sweet.
- Almost all the ingredinets are simple and easy to find or can be subsituted.
- You can save these in the fridge for up to a month or in the freezer for up to 3 months.
- These are dairy-free but not vegan, or keto. You can use gluten-free oats to make these gluten-free or low carb.

Ingredients and substitutes
- Rolled oats - Good old-fashion oats are the way to go when making granola or granola bars. The liquid ingredients soak into each individual grain, which then gets toasted beautifully on its own. Do not use quick-cooking or other types of oats.
- Egg whites - use fresh eggs with a little vanilla extract for flavor and to prevent the smell of eggs. YOu can also add some coconut oil for a coconuty flavor.
- Honey - I prefer natural sweetness when it comes to my granola. That way I can snack on it guiltfree. If you don't want honey, you can use maple syrup or agave syrup. Often, I even like to use silan, which is natural date-based honey. Very delicious but with a darker color, so the final granola bars are a bit darker.
- Nuts - I am using cashew nuts and almonds. Almonds are another powerhouse of good nutrition and health benefits, which is why you get them in all healthy snacks from almond butter to snacks.
- Seeds - These are nutritious and delicious. If you've never tried sunflower or pumpkin seeds, you must try adding them to your granola or salads.

How to make sugar-free granola bars
- Preheat the oven to 350°F/ 177°C/ Gas Mark 4
- In a large bowl, combine egg whites and honey. Use a whisk to ensure it's well combined. Add the oats, nuts, seeds, almond meal, chia seeds, and sea salt.
Pro tip - stir with a spatula and make sure that every grain is coated with the egg mixture because the egg whites are the glue that holds everythign together.

- Pour into a 10 x 10-inch baking tray or baking dish lined with parchment papers. Press firmly - I use a piece of parchment paper to press down.
- Bake in the preheated oven for 20 to 25 minutes or until it's dry and slightly golden.
- Remove from the oven - and cool in the pan for 5 minutes. Then, cool on a wire rack for another 10 mins.

- While still slightly warm, using a sharp knife cut into bars, as shown in the video.
- Cool completely. Then, store in an airtight container.

Variations
- Sugar - Replace the honey with brown sugar for sweetness
- Nuts - Today we also use almond meal as a binder. You can also use other nuts like walnuts, hazelnuts, macadamia, peanuts. Make sure to chop the nuts in the food processor into smaller pieces.
- Fruit - you can also add dried cranberries, chopped apricots, semi-sweet chocolate chips or dark chocolate chips. My kids love a heaping tablespoon of peanut butter.

The secret to making these bars is that you want to make sure the mixture is well combined. Each and every grain must be coated in an egg whites/honey mixture so they stick to each other. When the egg whites dry out during baking the grains continue to hold onto each other.
