Hi veena. First of all thnks a lot for sharing the recipe for mirror glaze. U make it look so effortless.n ur cakes r absolute marvels. I tried givin mirror glaze to a cake i made for my parents wedding anniversary today. The consistency seemed to b same as urs. But when i poured it over the chilled butter iced cake the top part was as expected but somehow it wasnt stickin onto the sides.i kept pourin more on the sides but it was coming off like hpw water trickles off a greasy surface. What could b wrong? Is it because its butter icing?

    1. Shalini sounds like you cake has condensation that is causing the mirror glaze to slide off. I mean the water condensation is not letting it stick lol.!! Is there anyway you can do this before or avoid condensation?

Yes u could b right abt condensation.i live in a humid region. So once the cake is chilled n removed frm the refrigerator yes my cakes “sweat”. I can avoid tht if i dot refrigerate the cake aftr icing it.But the cake needs to b chilled before pouring the glaze isnt it?is thr amy other way the condensation can b avoided? I would appreciate your suggestions

        1. I usually use my air conditioning on full blast when I’m working on such things in summer. I do remove the cake out only when it’s all set and ready!!

Hi…is there a particular type or brand of chocolate that can be used? Can chocolate melts be used? So can’t wait to try this…
    Thanx…
    Kim

    1. Yes you can use candy melts for this recipe. The brand of chocolate you use will determine the taste. I usually use either Callebaut or Laubecca

Thank you…I live in the States & have never heard of either of the chocolates you mentioned…I’m going to try using bright white chocolate melts.

        1. Kim as long as you have good chocolate or candy melts – it should be fine. The brand is not an important aspect here.

Thank you, I used this recipe to make a 60th birthday cake for my mother. The only change I made was to add a raspberry jelly insert (blended raspberries and gelatine). This add an extra dimension to the dark chocolate mousse and was lovely. I made my first mirror glaze using a black (ended up dark greyish greeen with glitter) base and orange, red, blue streakes and golden glitter icing streaks. I added metallic chocolate pearls to decorate. It went down a storm. Thank you.

    1. Wow.. Sounds so delicious. Raspberries and chocolate is another winning combination. If you share it on Instagram do tag me so I can see it. Thanks

Do I need to always use the gel food coloring? What if I use normal food coloring?

    1. I always use gel because I have them. But in this case I don’t think it will matter. You should have not problem with normal food color as long as you do not have to use too much and thin the glaze too much

After I put it in the fridge it was not mirror shiny any more will the shine come back when left out?

    1. What do you mean Michelle.. It’s gelatin so the gelatin will set but it still should have some gelatin shine just as you see in my pictures. I clicked my pictures the next day.
      Check your quality of gelatin.

hi.thaks for the recipe but actually want to find out if l could use corn syrup instead of the glucose.thanks

    1. Yes you can use Corn Syrup instead of glucose – glucose is a bit thicker so you may need to reduce a few tablespoons of water.

How many days ahead can I make this-keeping in the refrigerator, or freezer?

    1. I have kept it for four days in the fridge – freezer perhaps one week. Not tried more than that.

Hi Veena , congratulations for your beautiful cakes ! i would like to know what is the brand or a link to purchase the food coloring agents used in your recipes.thank

    1. I use Magic Colours Brand – they are available at any cake shop in UK or Erope I think — not in the US as yet. YOu can use any edible gel food colors for this project

Hi Veena, I tried this vegetarian mirror glaze today. I would like to say that it was perfect. Thank you so much for sharing. Just wondering, if I can mix some fruit juice or puree in it to make it flavoured? Or if you have any fruit mirror glaze recipe, would you please share it?

    1. Thank you so much Aarti, so glad it was perfect. Thank you so much for the feedback. Regarding the juice. I think you can use flavored candy melts, you can try replacing filtered juice instead of the water. The mirror effect will be dependent on the juice I think. Try it..! let me know as well. Thanks

please can I make mirror glase cake without the use of white chocolate and will it come out shiny

    1. I think there are mirror glaze without chocolate too. It’s just gelatin, corn syrup and glucose. If you google it you should be able to find something.
