    I’ve been making Apricot Jam successfully for 60 years and have never taken the time or effort to peel them. The little chunks of fruit make it better than a “purée”, like baby food. The peels are where the pectin is, so they help jell the final product. What a waste of time and fruit to even suggest peeling.

    1. Prudence. You can definitely keep the apricot skin in your jam.
      Personally, I find apricot skin quite chewy even after it has been cooked down in the jam.
      I like to share my recipes the way I make them. But thank you for the feedback.

    Love your backstory and your recipe – brilliantly tweaked with the lemon and butter. The only change I made was to add half the lemon juice as the jam began to thicken, along with the wedge of lemon rind which I removed at the end. When the local apricots arrive here in western Canada, I plan to make more, or at least pit and freeze some for year-round small batch jam. Finally, may I kindly suggest you research apricot kernels and cyanide – would be prudent to put a warning on your blog. Thanks for sharing your excellent recipe.
