    I’m just wondering, if I split the recipe in half how does this affect the size of the detrempe as well as how large I roll out after the initial fold?

    1. Hey Chris. You can make half the recipe. Just keep the fold manageable. If you roll them to the size here, it will be too thin.

  2. Hi Veena, I am a novice cook and one day decided I should make puff pastry at home. I have tried 2-3 other recipes before. The results I got from your recipe were by far the best. The puff pastry turned out so good and flaky and delicious. My whole family loved it.

  3. Wow! I just discovered this thing called puff pastry. It seemed to answer my quest for a snack I can put a hard boiled egg in without frying. I have seen many recipes but yours seems so detailed and makes me actually believe I can make it. I have one question I REALLY need an answer. If using margarine and all purpose flour only what would be the measurements?Where I live margarine is more easily available than butter as butter is very expensive. Bread flour too is very rare and when seen, expensive.I would REALLY appreciate your help/answer in thus regard. Thank you.

    1. Hey OGO. Margarine has a high water content so it is not recommended for puff pastry. As you roll the water from the margarine would be released into the dough.
      However, what you can do is beat the margarine well until most of the water is released. Then mix in some all-purpose flour and create a paste.
      Shape this into a square and use it in place of the butter. I hope that makes sense.

    You sure make it look simple. With the holiday season coming up I’ve been wanting to learn how to make puff pastry. The product you get at the store just doesn’t rate as high as home made. Can’t wait to try.
