    whipped cream with corn starch was not edible—the starch did not dissolve into the cream and left a film on the tongue when eaten.

  2. I am hoping to make the gelatin stabilized whipped cream. How early in advance could I make it? would making it 24 hours in advance and storing it in the fridge be ok? or would you recommend piping and using it right away? Thanks!!

    1. It is best to pipe it as soon as you make it because the gelatin sets in the fridge. Once you pipe it the gelatin will help store it longer. Hope that makes sense.

  3. The agar agar did not work for me. The whipped cream lost its stiffness and instead became clumpy and much less firm. Had to toss it.

    1. Jeanette. I believe cool whip already has been stabilized. This works great with heavy cream that you whip I have not tried stabilizing cool whip.

    Can I use this whipped cream as frosting for my cupcakes or do I need to make a whipped cream buttercream for frosting cupcakes?

    1. Debbie the best way to freeze whipped cream is in a container or individual portions on a baking tray. While it may do well in a piping bag, depending on the type of cream sometimes you can have a little separation. I usually pipe leftover whipped cream into swirls on a baking tray and freeze them. Once frozen I bag them into freezer safe bags. They will keep for a couple of weeks.

        1. Sehrish, if you use the gelatin method the gelatin will set when chilled so yes the whipped cream will be lumpy! It is best to use the gelatin method as soon as it is ready. The other methods can be kept in the fridge for two hours and still be pipeable.

    I tried the gelatin method, and it is practically foolproof. Only thing I will say is that when doubling the recipe, you need to temper the gelatin with a lot more than 4 tbsp of loose whipped cream.

  8. Hello, your page is very helpful and full of info, cannot wait to try out, but I have a question, how long will the cream hold its shape if I use the non gelatine/ agar agar method? I mean if I use cornstarch, sugar or powder milk. Thank you a lot.

    1. These usually keep for me between 32 to 48 hours. But it really depends on the weather. Warm weather tends to make them loose volume faster.

  9. For Method V – with gelatine, can i use Confectioners Sugar instead of Caster Sugar?

    1. Sugar takes longer to dissolve so powdered sugar works best to prevent overwhipping.

    2. For large quantity of whipping cream, how much gelatine should one take? Or a small amount of it is enough, the quantity of gelatine powder is not mentioned unlike agar agar where 1/4 tsp is clearly written.

      Also, I have found vegan gelatine – I am assuming it should work same as regular gelatine? Please share your valuable insight.

      1. The recipe card below has all the amounts mentioned in detail. I have not tried vegan gelatin. Please read the directions on the package to see how it work.
