    In india we dont get meringue powder, what can i use instead of that?

    1. Hi,
      Unfortunately you cannot substitute meringue powder with anything else so just replace it with the same amount of gelatin instead.
      I have made it without meringue too and I know it does work. You might need more than 900 grams of powder sugar. The meringue powder works great not only for taste but the summer heat.

        Hii have been finding n getting excited to try out the fondant recipes but not convinced..but your recipe and the comments have given me headscarf..can’t wait to try it out except the fact dat I dunno Wat is cmc…since the meringue is not available wer I.live. Will leave d comments once I try d recipe.thanks a loads for sharing.

          CMC is edible gum that helps makes the fondant a bit more stable and easier to dry. You do not need it for cakes but you do need it to model things as fondant on it’s own is stable. Meringue can help but can also be omited in the recipe.

    Hi Beth,
    I'm glad you like the fondant. As I said in my post you don't really need to refrigerate it. Here in Israel the summer is really hot and humid so if I don't need to use it store it in the fridge. My rule in business is – better safe than sorry.
    As for the microwave. It should be ok for a few seconds. As with all fondant because it contains gelatine my personal

    2. Yes, the gelatine is a key ingredient in this recipe. Please do not omit the gelatin. You do get vegetarian gelatin as well, if that is what you are concerned about.
      If you cannot find gelatine I suggest you try Marshmallow fondant. But please that marshmallows contain gelatine as well.

    Your work is Fabulous and i tried your buttercream icing it came out very well. The taste is very much superior to the other recipies which use only butter and sugar.Thanks for your wonderful tutorials . If you could write a note about the storage instructions about the fondant would be very helpful.

    I'm so glad to hear you loved the sugar paste. My life has become a lot more simpler every since I have been using it.
    You will see that it is a lot forgiving in the sense that you can re-roll it a couple of times and it won't dry out easily.

      1. Yes Jyoti it’sugar so it reacts to the hot and humid weather. Next time put the Air Condition on high and work quick. Sorry I know how humid the weather in China can be.

          1. You can use any frosting such as Buttercream and Ganache under fondant. As long as it is stable and not too light like Fresh Cream.
            No, you do not need to put the cake in the fridge.. you can leave it out but fondant cakes can also be kept in the fridge. There will be condensation when you get it out but that will eventually dry.
