This homemade buffalo sauce is a flavorful blend of hot sauce, butter, vinegar, and seasonings. It’s easy to make and perfect for adding a spicy kick to your favorite dishes. Use it as a marinade or dipping sauce, or drizzle it over chicken wings for a classic buffalo flavor.

When I think of buffalo sauce, it takes me back to my childhood kitchen, where the aroma of spicy tanginess would fill the air every time my mom made it from scratch. Growing up, homemade was the norm in our household, and buffalo sauce was no exception. But her secret blend of spices truly set her buffalo sauce apart. She’d sprinkle in a pinch of garlic and onion powder and just a dash of spices, each addition adding depth and complexity to the sauce.
As an adult, I reach for that same recipe whenever the craving strikes. There’s something deeply satisfying about carrying on the tradition of homemade recipes, honoring the memories of those childhood kitchen moments with my mom. And I can’t help but smile, knowing that I’m keeping a delicious tradition alive with each batch.
Why make homemade buffalo sauce?
- Simple Ingredients: The recipe uses basic ingredients readily available at most grocery stores, making it accessible to anyone.
- Customizable Heat Level: You can adjust the amount of cayenne pepper to control the sauce’s spiciness, allowing you to tailor it to your preference.
- Versatile Use: While traditionally used for buffalo wings, this sauce can be used in various dishes, such as chicken sandwiches and wraps, or as a dipping sauce.
- Homemade Flavor: Making your own sauce allows you to enjoy the fresh, homemade taste you can’t get from store-bought versions.

Ingredients and substitutes
- Hot Sauce: Provides the primary flavor and spiciness of the sauce. For an authentic Buffalo flavor, use a hot sauce like Frank’s RedHot. You can also use any other hot sauce, such as Tabasco or Sriracha.
- Butter: Adds richness and helps balance the heat of the hot sauce. You can also use margarine or a dairy-free butter alternative.
- White Vinegar: Adds acidity and tanginess to the sauce. You can also use apple cider vinegar or lemon juice.
- Worcestershire Sauce: Adds depth of flavor and umami notes. For a vegetarian or vegan option, you can also use soy sauce or tamari.
- Cayenne Pepper: Adds extra heat and flavor. However, it’s optional; adjust to taste. Paprika or chili powder is also great for a milder flavor.
- Garlic Powder: Adds a subtle garlic flavor. Fresh minced garlic (use less as it is stronger) or garlic salt (reduce or eliminate additional salt) can also be used.

I grew up eating what my mom called red chicken. Absolutely loved it. So when married and making dinner I also made red chicken for my family. My children know it as red chicken as do their children. When Buffalo chicken wings became a sensation I had to laugh to myself as we know it as red chicken! My Southern family also made red chicken when we visited them each summer! I’m sure my mom got the recipe from my southern aunts! She also made pulled pork with the red sauce.
Ha!! I grew up calling these sweet chicken (BBQ sauce) and the other spicy chicken (Buffalo sauce). Only realized they had names until we grew up!!
I loved this sauce, so easy and quick recipe. Perfect amount of spice and fresh sauce.
