Shortbread sticks are the unsung heroes of the breakfast world. They are typically shaped into slender sticks, making them easy to dip, dunk, or nibble on during your morning routine.
The beauty of shortbread sticks lies in their versatility. While they are delicious on their own, they also serve as the perfect canvas for various flavors. From traditional vanilla to zesty citrus, you can customize your shortbread sticks to suit your taste preferences and make your breakfast experience unique.
One of the reasons this recipe stands out from the rest is its perfect balance of flavors and textures. The shortbread is rich and buttery, with just the right amount of sweetness. When dipped in luscious, melted chocolate, it creates an indulgent combination that will satisfy even the most demanding sweet tooth.
Why is this the best recipe
- Well, let’s start with the basics. The combination of flour, soft butter, salt, vanilla, and powdered sugar forms the foundation of these delectable treats. This recipe uses the perfect measurements and ratios to create a dough that is easy to work with, resulting in shortbread sticks with the ideal texture and flavor.
- And speaking of flavor, adding chocolate takes these sticks to a whole new level of deliciousness. Dipping them in rich, melted chocolate adds a decadence that elevates this treat from ordinary to extraordinary. The smooth coating of chocolate complements the buttery, crumbly shortbread perfectly, creating a harmonious balance of flavors.
- But it’s not just the ingredients that make this recipe stand out. The attention to detail and the little tips and tricks ensure success every time. From chilling the dough before baking to using high-quality chocolate for dipping, every element of this recipe has been carefully considered to guarantee the best results.
- So, whether you’re a seasoned baker or just starting, this recipe is designed to make you feel like a pro. The step-by-step instructions guide you through the process, making it easy to achieve beautiful, perfectly shaped shortbread sticks that are a joy to behold and even better to eat.
Ingredients and substitutes
- First, we have flour, the foundation of any shortbread recipe. All-purpose flour works best for this recipe, providing the right structure without making the shortbread sticks too dense. You can use cake flour instead if you prefer a more tender texture.
- Soft butter is another key ingredient, as it adds richness and helps bind the dough together. Ensure the butter is at room temperature before using it, as softening it in the microwave can lead to uneven results. If you’re looking for a dairy-free option, you can substitute the butter with margarine or coconut oil, considering it might slightly alter the flavor.
- A pinch of salt enhances the overall taste, balancing out the dough’s sweetness. A tiny amount can make a big difference, so don’t skip this ingredient. As for vanilla, it adds a hint of warmth and depth to the shortbread sticks. Opt for pure vanilla extract to get the best flavor, but vanilla bean paste or almond extract can be used as substitutes if you don’t have any on hand.
- Lastly, sugar brings a touch of sweetness and a hint of caramelization to the shortbread. The amount of sugar can be adjusted according to personal preference – a little less for a less sweet shortbread and a little more for those with a sweet tooth. Remember that fine granulated sugar will dissolve more easily into the dough, resulting in a smoother texture.
Step-by-step chocolate-coated shortbread sticks
- To start, cream the softened butter and sugar together until light and fluffy using an electric mixer or a wooden spoon. This will incorporate air into the mixture and create a creamy base for your shortbread. Fine granulated sugar will ensure easy dissolution into the dough, resulting in a smoother texture.
- Then, add the salt and vanilla extract, followed by the sifted flour. Sifting the flour ensures no lumps and helps achieve a lighter texture. Mix the dough until it comes together, being careful not to overmix, as this could result in a tougher shortbread.
- Transfer the dough onto a lightly floured surface and bring it into a ball. Then, shape it into a rectangle and wrap it in plastic. Chill in the fridge for 15 minutes until it’s not too hard to roll.
- In the meantime, preheat your oven to 325°F /160°C/ Gas Mark 3. This will ensure that your shortbread bakes evenly and attains that perfect texture we aim for.
- Now, it’s time to shape the dough into sticks. Roll the dough into a rectangle about 1/4 inch thick on a lightly floured surface. Then, using a sharp knife, a pizza cutter, or a bench scraper, cut the dough into thin strips, about 1/4 inch wide and 5 inches long. Do not separate them yet. These shortbread sticks won’t spread during baking, so placing them close together will prevent them from breaking easily.
- Pop the baking sheet into the preheated oven and bake for about 15 minutes or until the edges of the shortbread sticks start turning golden brown. Keep an eye on them; they can quickly go from perfectly golden to slightly burnt.
- Once baked, remove the shortbread from the oven and let them cool for just 5 minutes. While still warm, use a knife or bench scraper to cut along the lines previously made. This will ensure they can be easily separated when cooled.
- Once cooled, carefully separate them and leave them to cool completely on a baking tray. They will continue to firm up as they cool, which makes it easier to work with.
- Now comes the fun part – dipping the shortbread sticks in chocolate! Melt your preferred type of chocolate in a microwave-safe bowl or double boiler. If the chocolate is too thick, add a tablespoon of cooking oil to lighten it.
- Once melted, hold each shortbread stick in the center and dip it into the chocolate, coating about half the stick. Allow excess chocolate to drip off before dipping sticks on parchment paper.
- If desired, sprinkle some chopped nuts, zest, or crushed rose petals while the chocolate is wet.
- Once the chocolate has hardened, these scrumptious chocolate-coated shortbread sticks are ready to be enjoyed!
Tips for Success
- First and foremost, it’s essential to use high-quality ingredients. Opt for premium unsalted butter, as it will enhance the rich flavor and delicate texture of the shortbread. Additionally, choose a good quality chocolate for dipping, whether dark, milk, or white, to elevate the overall taste experience. Remember, the quality of your ingredients will directly impact the final result.
- When it comes to the shortbread dough, be sure to handle it with care. Overmixing or kneading the dough can lead to a tougher texture. Instead, gently mix the butter, sugar, and flour until the dough comes together. This will ensure a tender, melt-in-your-mouth consistency once baked.
- For perfectly shaped and evenly baked shortbread sticks, using a ruler or a straight-edged utensil is recommended to cut the dough into uniform strips. This will result in a more professional appearance and ensure even baking time for each stick.
- Once your shortbread sticks are baked to golden perfection and cooled, it’s time to dip them in chocolate. One crucial tip is to melt the chocolate slowly and gently, whether using a double boiler or a microwave. Be patient and avoid overheating the chocolate, as it can seize or become grainy. Stir frequently until the chocolate reaches a smooth and glossy consistency.
- As you dip each shortbread stick into the melted chocolate, ensure that you do so gently because these sticks are delicate. Hold in the center to maintain balance and work delicately. Allow any excess chocolate to drip off before placing them on a lined baking sheet to set.
- Finally, as the chocolate sets and hardens, it’s essential to exercise patience. Give the sticks enough time to fully solidify by leaving them at room temperature or placing them in the refrigerator for a quicker setting.

- Chill – Wrap the dough in plastic and transfer it to the refrigerator to chill for 15 to 30 minutes.
- Roll the dough: Roll the dough between two sheets of parchment paper to about 1/4 inch thickness. Try to maintain its rectangular shape so you minimize trimmings.
- Score and Prick the Dough: Use a sharp knife to score the dough into rectangular shapes. You can make minor marks to create individual cookies. Prick each cookie with a fork to create tiny holes, which will help prevent the shortbread from puffing up too much during baking.
