Valentine Heart Cookies
These Valentine’s Heart Cookies are buttery sugar cookies with beautiful swirls of pink, red, and fuchsia that make every cookie one of a kind. They’re easy to roll, cut, and bake, making them perfect for Valentine’s Day cookie boxes, parties, or homemade gifts.
Whether you keep them simple or use embossed cutters and layered designs, these Valentine’s heart cookies are just as fun to make as they are to share. Their tender texture and colorful marbled finish make them a festive treat everyone will love.

Valentine’s Day is one of my favorite excuses to bake cookies. I don’t always have the time (or patience!) to decorate every cookie with royal icing, so I love recipes where the dough itself becomes the decoration. These marbled Valentine’s heart cookies are colorful, playful, and every cookie turns out a little different.
After years of decorating cakes, I still enjoy finding simple ways to make homemade treats look special. By combining different shades of pink and red dough, these cookies have a beautiful handmade look without any complicated decorating. They’re always a favorite for cookie boxes, classroom treats, or sharing with family and friends.
Why You’ll Love These Pink Valentine’s Day Cookies

Ingredients and Substitutes
- Butter – Gives the cookies their rich, buttery flavor. Use unsalted or salted butter, depending on your preference.
- Powdered sugar – Creates a tender cookie with a delicate crumb.
- Eggs – Bind the dough and add richness.
- All-purpose flour – Gives the cookies structure. A good-quality 1:1 gluten-free flour blend can be substituted if needed.
- Cornstarch – Helps create a soft, melt-in-your-mouth texture. Arrowroot or potato starch also work.
- Salt – Balances the sweetness and enhances the flavor.
- Baking powder – Gives the cookies a light texture. Make sure it’s fresh for the best results.
- Gel food coloring – Pink, red, and fuchsia create the marbled and layered designs. Gel colors give the brightest color without making the dough sticky.

Step-by-step: Pink Heart Cookies
- Dry ingredients – Whisk the flour, cornstarch, salt, and baking powder in a separate bowl.
- Wet ingredients – In a large mixing bowl, cream the softened butter and powdered sugar until light and fluffy. Add the egg and vanilla extract and beat until well combined. You can use a hand mixer or a stand mixer for this step.
- Dry to wet – Gradually add the dry ingredients to the wet ingredients in the mixing bowl. Mix until a dough forms. The dough might be crumbly at first, but it should come together when you knead it with your hands.

- Divide the dough into four equal portions. Leave one portion as it is for white cookies.
- Dye – Add a few drops of pink, red, and fascia gel food coloring to the other three portions of cookie dough. Knead the dough until the color is evenly distributed.
- Chill – Wrap each colored dough in plastic wrap and refrigerate for at least 30 minutes to firm it up.

- Oven – Preheat your oven to 350°F /175°C/ Gas Mark 4 and line a baking sheet with parchment paper.
- Roll – Take one colored dough out of the refrigerator at a time. Roll it out on a lightly floured surface to about 1/4-inch thickness.
- Cut – Use heart-shaped cookie cutters to cut out various heart shapes from each colored dough. You can use different sizes for variety. Carefully transfer the heart-shaped cookies to the prepared baking sheet, leaving a bit of space between each one.
- Bake in the preheated oven for 8-10 minutes or until the edges of the cookies start to turn golden.
- Cool – Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Decorate – Once the cookies are completely cool, you can decorate them with icing, sprinkles, or powdered sugar if desired.

- Use room temperature butter. It creams more easily and creates a smooth, tender dough.
- Measure the flour correctly. Too much flour can make the cookies dry and tough.
- Chill the dough. Cold dough is easier to roll and helps the cookies keep their shape while baking.
- Roll to an even thickness. This ensures all the cookies bake evenly.
- Line your baking trays. Parchment paper prevents sticking and makes cleanup easy.
- Don’t overbake. Bake until the edges are just beginning to turn golden for soft, tender cookies.

Frequently asked questions
To prevent your Valentine’s heart cookies from spreading and losing their shape, it’s essential to chill the dough before rolling and cutting it into shapes. Once you’ve shaped the cookies, place them in the refrigerator for at least 30 minutes before baking. Chilled dough will hold its shape better during the baking process, resulting in beautifully defined heart cookies.
When it comes to making Valentine’s heart cookies, you want a dough that not only holds its shape but also tastes delicious. The best dough for these cookies is a roll-out sugar cookie dough. This type of dough is easy to work with, holds the shape well during baking, and provides a sweet and buttery taste that pairs perfectly with any icing or decorations.
I usually chill my cookies for about 15 to 30 minutes. It is always a good practice to refrigerate cookies while the oven is preheating. In fact, chilling cookie dough helps solidify the butter in the cookies. This helps when baking by preventing them from spreading since chilled dough takes longer to melt compared to room-temperature fat.
Royal icing is the go-to icing for decorating Valentine’s heart cookies. This icing sets firmly, creating a smooth and glossy finish that is perfect for intricate designs, piping outlines, or flooding the surface of the cookies with vibrant colors. Additionally, royal icing dries quickly, allowing you to stack and transport your cookies without smudging or damaging the decorations.

The cookies are so cute and it’s great having a sugar cookie recipe that doesn’t spread. And no chill!! That is certainly a time saver.
