I’ve always loved the balance of sweet and savory flavors in Middle Eastern cuisine, and this dish brings me right back to family dinners where the kitchen was filled with the warm aroma of spices. The combination of tender chicken, caramelized apricots, and fragrant saffron reminds me of the comforting tagines my mom used to make—slow-cooked, deeply flavorful, and always served with fluffy couscous. Over the years, I’ve adapted the recipe to be effortless in a slow cooker, so I can enjoy those nostalgic flavors without spending hours in the kitchen.
Serve this with saffron rice, warm flatbread, or a fresh cucumber salad, and you’ll have a meal that’s both comforting and impressive!
Why is this the best recipe
- Rich, Authentic Middle Eastern Flavors – This recipe uses warm spices like cinnamon, cumin, and saffron, along with sweet apricots, honey, and pomegranate molasses to create a perfect balance of sweet, savory, and aromatic depth, just like a traditional Moroccan or Persian dish.
- Tender, Juicy Chicken – Cooking bone-in, skin-on chicken thighs in a slow cooker ensures they become fall-apart tender while absorbing all the flavorful sauce. The slow cooking process enhances the natural richness of the dish without drying out the meat.
- Minimal Effort, Maximum Flavor – The slow cooker does all the work! With just a quick sear (for extra depth) and a handful of pantry-friendly ingredients, this dish transforms into a gourmet meal without needing hours of hands-on cooking.
- Versatile & Perfect for Any Occasion – This dish is great for meal prep, easy enough for a weeknight dinner, but also elegant enough for entertaining. Serve it with couscous, rice, or warm flatbread, and you have a restaurant-quality meal at home with minimal effort.

Ingredients and substitutes
- Chicken Thighs – Bone-in, skin-on for flavor and juiciness. You can also use boneless thighs (reduce cooking time) or chicken drumsticks for a similar result.
- Dried Apricots – Provide natural sweetness and depth. You can also substitute with prunes, dates, golden raisins, or dried figs for a slightly different flavor profile. Fresh apricots don’t provide the same concentrated sweetness. If using fresh, add a tablespoon of honey or pomegranate molasses to maintain the depth of flavor.
- Cinnamon & Cumin – Essential Middle Eastern spices that add warmth. If needed, you can also replace cumin with ground coriander or add a pinch of turmeric for an earthy note.
- Pomegranate Molasses – Adds tangy richness and balances the sweetness. You can also swap it with honey + a splash of lemon juice or balsamic glaze.
- Harissa Paste – Brings a mild heat and depth. You can also use red pepper flakes, cayenne, or smoked paprika for a milder version.
- Saffron – Gives the dish a subtle floral aroma and golden color. If unavailable, use turmeric + a bit of lemon zest to mimic the color and brightness.
- Chicken Broth – Adds moisture and enhances flavor. You can also use vegetable broth or water with a teaspoon of bouillon as a substitute.
- Toasted Almonds – Provide crunch and nuttiness. Swap with pine nuts, pistachios, or slivered almonds for a similar texture.
- Fresh Herbs (Cilantro or Parsley) – Add freshness at the end. If you prefer, you can also use mint or dill for a different herbaceous touch.

Notes
- Sear for Maximum Flavor – Browning the chicken before slow cooking locks in juices and adds a deeper, richer flavor to the dish. If short on time, you can skip this step, but it makes a noticeable difference.
- Bloom the Saffron – Soak saffron strands in warm water for 5-10 minutes before adding them. This helps release the full aroma and color, making the dish more vibrant.
- Layer the Ingredients Correctly – Place chicken first, then onions, then apricots and broth to allow flavors to infuse properly without overcooking the dried fruit.
- Use Bone-In, Skin-On Chicken for Best Texture – The skin and bones help keep the meat tender and add extra richness to the sauce. If using boneless thighs, reduce the cooking time to prevent drying out.
- Balance Sweetness & Acidity – If the dish is too sweet, add a splash of lemon juice or apple cider vinegar to balance it. If it’s too tangy, stir in a bit more honey or a pinch of sugar.
- Thicken the Sauce if Needed – After cooking, if the sauce is too thin, remove the lid and let it simmer for 10-15 minutes on HIGH in the slow cooker, or stir in a cornstarch slurry (1 tsp cornstarch + 2 tsp water).
- Let the Chicken Rest Before Serving – Resting for 5 minutes after cooking allows the juices to redistribute, keeping the meat moist and flavorful.
- Garnish for Extra Flavor & Texture – Sprinkle with toasted almonds, pomegranate seeds, or chopped parsley/cilantro for a fresh, vibrant finish.

This is such a fabulous idea to use apricot jam with chicken. I always keep thinking what to do with the leftover jam and this would make a delicious tasting meal 🙂
Absolutely Molly. It’s not much really but that little jam can take this chicken flavor to wow.. You must try.
I just ate lunch and you have my mouth watering. I do like using our slow cooker and I’ve been eyeing the Insta-pot. But seriously, do I really need another contraption in the kitchen. We have a heavy Le Creuset Dutch oven so I think I’ll wait until they come out with something else and then they’ll be plenty of Insta-pots at Goodwill. Now couscous is perfect for soaking up the juices and I like how you continued the fruity flavor in the couscous. Great recipe.
I still don’t have an insta pot yet. I use to have a pressure cooker long time ago but rarely used it. I love my dutch oven too especially for slow cooking. OH my kids love couscous.
What a great meal love a good chicken dish for the week and the combination with the cranberries is very appetizing. Must try it soon in any of our weeknight dinners.
Than you Adriana. I love cranberry and Chicken combination very much. Apricots in it.. makes things even better.
I never would have come up with using cranberries and apricots in the slow cooker with chicken. I just made cranberry apricot banana bread, so now I’m excited to try this. It looks amazing!
Oh I love cranberry and apricot cake too! Bread sounds yum. I love using my slow cooker for such slow cooking. Cranberry and Apricot are actually perfect flavor combo with chicken. You must try
This recipe makes me drool. Slow cooked chicken is the most tender. I love that texture and with other flavours, I am sure it will be amazing.
Absolutely Deepika.. Chicken is cooked perfectly in the slow cooker can be a real treat.
I have never thought of making chicken with cranberries like this before. The sweet jam and the tart apricot would pair well with The garlic.
Chicken and Cranberries make a delicious combination Pam.. You much try.

Ah so happy to hear that Karyn. YOu can make this in the slow cooker or on the stove top both work absolutely well.
Just in time for the fall weather that’s ahead! I love a good comfort dish, especially one that I can set and forget in my slow cooker. I’m definitely adding this to my meal plan!
Thank you Melissa. Absolutely love when you can just add things in the slow cooker and leave it unattended for a few hours. I call that comfort cooking
I will be the first to admit, I do no like to eat chicken that has been cooked in a slow cooker. However, this dish looks so good! I think I’ll make it, and skip the slow cooker. 🙂
I know what you mean Joanna. Chicken if over cooked especially in the slow cooker can have a very powdery texture. I hate that too. This one really becomes soft and juicy. But like I said in the post you can skip the slow cooker all together.
