Couscous Salad
This light and refreshing couscous salad is packed with crunchy cucumbers, juicy tomatoes, briny olives, sweet raisins, and nutty walnuts. The lemon honey dressing ties it all together with a perfect balance of sweetness and acidity.

I first had couscous salad years ago in a small Middle Eastern restaurant. The fluffy couscous, the crunch of cucumbers and walnuts, the sweetness from raisins, and that tangy lemon dressing were simple yet packed with so much flavor.
Since then, I’ve been making my own version of that unforgettable salad, keeping the same combination of ingredients that first won me over. Every time I serve it, whether at family dinners or gatherings with friends, it always gets rave reviews. Someone always asks for the recipe, and I love watching their surprise at how easy it is to make.
For me, this salad is more than just a recipe—it’s a reminder of how a single meal can leave a lasting impression. It’s fresh, vibrant, and endlessly adaptable, but no matter how many times I make it, the magic of that first bite never fades. If you’ve never tried couscous salad before, this is the perfect place to start!
Why is this the best recipe
- Perfect Balance of Flavors – The combination of sweet raisins, tangy lemon dressing, salty olives, and crunchy walnuts creates a perfect harmony of flavors in every bite.
- Quick and Easy to Prepare – Using instant couscous means this salad comes together in just 15 minutes, making it a perfect last-minute side dish or light meal.
- Healthy and Nutritious – Packed with fresh vegetables, heart-healthy walnuts, fiber-rich couscous, and a vitamin-packed dressing, this salad is both nourishing and satisfying.
- Versatile and Customizable – You can easily swap ingredients based on preference, such as using almonds instead of walnuts, adding feta cheese for creaminess, or using fresh mint for an herby twist.

Ingredients and substitutes
- Instant Couscous provides a light, fluffy base that absorbs the dressing beautifully. You can also use quinoa, bulgur, or pearl couscous for a different texture.
- Cucumber adds freshness and crunch. Try zucchini or bell peppers if you prefer a different vegetable.
- Red Onion gives a sharp, slightly sweet bite. Swap with shallots, green onions, or chives for a milder flavor.
- Cherry Tomatoes bring juiciness and acidity. Regular diced tomatoes or sun-dried tomatoes can work as alternatives.
- Fresh Parsley adds a bright, herby flavor to the salad. Mint, cilantro, or basil can be used for a different herbal note.
- Black or Green Olives add a briny, savory contrast. Capers or feta cheese can be used instead for a similar salty kick.
- Walnuts provide crunch and richness. Try almonds, pecans, pine nuts, or sunflower seeds as substitutes.
- Raisins or Dried Cranberries bring sweetness to balance the flavors. Chopped dates, dried apricots, or currants work well too.
- Lemon Juice adds bright acidity. Lime juice or apple cider vinegar can be used if needed.
- Honey gives a touch of sweetness. Maple syrup or agave syrup are great vegan alternatives.
- Olive Oil creates a smooth, flavorful dressing. Avocado oil or a neutral oil like grapeseed can be used instead.

Step-by-step: Couscous salad
- Prepare the Couscous – Place the instant couscous in a bowl and add 1 cup of hot water or vegetable broth. Cover and let it sit for 5 minutes, then fluff with a fork. Allow it to cool slightly.
- Make the Dressing – Whisk together lemon juice, olive oil, honey, salt, and black pepper in a small bowl until well combined.

- Assemble the Salad – In a large bowl, combine the cooled couscous, cucumber, onion, tomatoes, parsley, olives, walnuts, cranberries, and raisins. Pour the dressing over the salad and toss until everything is evenly coated.
- Chill and Serve – Let the salad sit for 15-20 minutes for the flavors to meld. While it’s traditionally served at room temperature or chilled, you can enjoy it slightly warm by tossing the couscous with the dressing while still warm, then adding the fresh ingredients.

Frequently asked questions
Yes! This salad actually tastes better after sitting for a few hours as the flavors meld together. Store it in an airtight container in the fridge for up to 2 days.
Use the correct water-to-couscous ratio (1:1 for instant couscous). Let it absorb the liquid, then fluff with a fork instead of stirring. Deseed the cucumbers before chopping and pat them dry with a paper towel to reduce excess moisture.
Oh, this recipe is so versatile. Try grilled veggies, and add boiled veggies. You can even add meat such as grilled chicken or sliced cold cuts. Try pomegranate seeds, toasted sunflower seeds, crumbled goat cheese, or avocado for extra texture and taste.
Absolutely! A balsamic vinaigrette, tahini dressing, or yogurt-based dressing would work well with this salad.
