Melt the chocolate - Chop the chocolate finely and melt in the microwave or over a double boiler. Stir until smooth. Let it cool to room temperature.
200 g Chocolate
Make a cocoa paste - Mix the cocoa powder and hot water in a small bowl until smooth. Let cool.
2 tbsp Cocoa powder
Whip the cream - In a stand mixer (or with a hand mixer), whip the cream until stiff peaks form. Do not over-whip.
240 ml Whipping cream
Fold in condensed milk & vanilla - Add condensed milk and vanilla extract to the whipped cream. Mix just until combined.
120 ml Condensed milk, 60 ml Hot water, 1 tsp Vanilla extract, ½ tsp Salt
Add chocolate & cocoa paste - Slowly fold in the cooled melted chocolate and cocoa paste. Mix until fully incorporated and smooth.
Freeze - Transfer to an ice cream container or loaf pan. Sprinkle with chocolate chips (if using). Cover and freeze for at least 4 hours, preferably overnight.
45 g Chocolate chips
Scoop and serve - Let it sit for 5–10 minutes before scooping. Enjoy as-is, or serve with waffles, cookies, or cake.
