This tomato Mozzarella salad is a great twist on the Italian classic Caprese salad with toasted pine nuts. Tomato and mozzarella are always a great combination. The best part is this gets done in no time at all and can be kept in the fridge for days.
Ingredients
Salad
1lb(500g)Cheery tomatoes
½lb(250g)Mozzarella balls
1smallSpanish red onionsliced
½cup(65g)Pine nutstoasted
¼cupBasil or fresh parsley
Dressing
¼cup(60ml)Olive oil
2tbspLemon juice or Vinegar
1tspMustard
1tbspHoney
¼tspSalt
¼tspPepper
Instructions
Dressing - In a mason jar - add all the dressing ingredients. Roughly tear two basil leaves and add them to the dressing. Close the lid and give the jar a good shake. Set aside until ready to use it.
¼ cup Olive oil, 2 tbsp Lemon juice or Vinegar, 1 tbsp Honey, ¼ tsp Salt, ¼ tsp Pepper, 1 tsp Mustard
Pine nuts - In a frying pan toast the pine nuts. I like to get little light brown spots on them,
½ cup Pine nuts
Tomatoes: Remove the stems, then wash and drain cherry tomatoes. Make a slit in each tomato. Alternatively, cut, deseed, and dice two large tomatoes.
1 lb Cheery tomatoes
Mozzarella - drain Mozzarella balls from water and set them aside. Alternatively, use a block of mozzarella. Cut into cubes and set aside.
½ lb Mozzarella balls
Assemble - To a salad bowl, add the tomatoes, Mozzarella, sliced onions, parsley, and toasted pine nuts. Roughly tear a few basil leaves and add them too. Pour the dressing over the salad and combine well.
¼ cup Basil or fresh parsley, 1 small Spanish red onion
Rest - Cover with plastic wrap and let chill in the fridge for an hour or until ready to serve
