This slow cooker beer braised beef stew is made with tender beef chuck, carrots, and potatoes in a rich, savory beer gravy. Brown the beef first for extra flavor, then let the slow cooker do the rest until the beef is fork-tender.
Deglaze – Pour in the beer and scrape the browned bits from the bottom of the pan. Simmer for 2 to 3 minutes.
240 ml Beer
Assemble – Add the carrots and potatoes to the slow cooker with the beef. Pour the beer mixture over everything. Add the beef broth and bay leaves.
240 ml Beef broth, 3 medium carrots, 500 g Potatoes, 2 Bay leaves
Slow cook – Cover and cook on LOW for 7 to 8 hours or HIGH for 4 to 5 hours, until the beef is fork-tender and the vegetables are cooked through.
Finish – Remove the bay leaves. Taste and adjust salt and pepper as needed. If the gravy is too thin, leave the slow cooker uncovered on HIGH to reduce slightly. Garnish with parsley and serve.
