Ingredients
1largeFrench baguettesliced into ½-inch thick rounds
2largeRed bell peppers
6oz.Soft goat cheese
2largeGarlic clovesminced
2tbspOlive oil
½tspSalt to taste
½tspBlack pepper powder
Fresh basil leavesfor garnish
Instructions
Preheat the broiler in your oven. Place the red peppers on a baking sheet and broil, turning occasionally, until the skin is charred and blistered, about 10-15 minutes. Remove from the oven and place in a bowl. Cover the bowl with plastic wrap and let the peppers steam for about 10 minutes.

Remove the peppers from the bowl and peel off the skin. Remove the stem and seeds, then slice the peppers into thin strips.
Meanwhile, preheat the oven to 375°F /190°C / Gas mark 5. Place the baguette slices on a baking sheet and brush them with olive oil. Bake for about 8-10 minutes or until lightly toasted.

In a small bowl mix the goat cheese with the minced garlic, salt, and pepper.

To assemble the crostini, spread a layer of the goat cheese mixture on each toasted baguette slice. Top with a few strips of roasted red pepper.
Garnish with fresh basil leaves and serve.
