Cream – In the bowl of a stand mixer fitted with the paddle attachment, cream the softened butter and sugar until light and creamy, about 2 to 3 minutes.

Bake – Bake for 8 to 10 minutes, until the cookies are set but still pale. Do not wait for them to brown.
Cool – Leave on the baking tray for a few minutes before carefully transferring to a cooling rack. Cool completely before filling.
Fill – Pipe or spoon dulce de leche onto the flat side of half the cookies.
Sandwich – Top with the remaining cookies and press very gently until the filling reaches the edges.
