1tbspOlive oil
2largeGarlic clovesminced
1mediumOnionsfinely chopped
1mediumCarrotfinely diced
2Celery stalksfinely chopped
1mediumPotatoediced small
2tbspTomato paste
2Bay leaves
1cup(250ml)Stock
½cupParmesan
½cupGouda cheese
½cupParsley finely chopped
½tspKosher salt
½tspBlack pepper
Instructions
Brown—Add the oil to a soup pot and brown the ground beef over medium-high heat.
1 tbsp Olive oil, 1 lb Ground beef
Saute - Next, add the garlic, onions, carrots, and celery. Saute until the onions are translucent. Then, add the potatoes and saute for another 2 minutes. Season with salt and pepper.
2 large Garlic cloves, 1 medium Onions, 1 medium Carrot, 2 Celery stalks, 1 medium Potatoe, ½ tsp Kosher salt, ½ tsp Black pepper
Stock - Add the tomato paste, bay leaves, and stock. Simmer for 8 to 10 minutes or until the potatoes are tender.
2 tbsp Tomato paste, 2 Bay leaves, 1 cup Stock
Finish - Add the parmesan, cheddar, and parsley. Taste and adjust seasoning and consistency adding more water or stock if necessary.
½ cup Parmesan, ½ cup Gouda cheese, ½ cup Parsley
Serve hot with toasted bread or croutons.
