2lb(900g)Potatoes Yukon Gold or Russet potatoes cut into cubes
½tspSalt
1tspPepper
½ - 1tspGarlic powder(or less)
½ - 1tspPaprikasweet, smoked
2 - 4tbspOlive oil you can use melted butter
½cup(50g)Grated Parmesan
2tbspParsley finely chopped for garnish
Instructions
Preheat the Oven: Preheat your oven to 425°F (220°C).
Parboil the Potatoes: Place the halved potatoes in a large pot and cover with water. Add a pinch of salt. Bring to a boil over high heat, then reduce to medium and let simmer for 10 minutes. Drain the potatoes and let them cool slightly.

Toss with Olive Oil: In a large bowl, toss the parboiled potatoes with olive oil until evenly coated.
