Instructions
Egg yolk mixture - Place the egg yolks, salt, and half the sugar in a heatproof bowl set over a pot of simmering water. Whisk for a few minutes until the mixture becomes pale, slightly thick, and fluffy. Remove from the heat, add the vanilla and alcohol, and set aside to cool completely
6 large Egg yolks, 100 g Sugar, ¼ tsp Salt, 1 tsp Vanilla extract, 2 tbsp Alcohol - dark rum, brandy
Whipping cream - In a separate bowl, whip the heavy cream with the remaining sugar until it reaches almost stiff peaks. It should hold its shape but still look smooth. Set aside.
350 ml Heavy cream, 3 tbsp Powdered sugar
Whip the mascarpone - In another large bowl, stir the mascarpone just until smooth and creamy. Do not overmix.
450 g Mascarpone cream cheese
Make the filling - Fold the cooled egg yolk mixture into the mascarpone until combined. Then fold in the whipped cream gently with a spatula until the mixture is smooth and no streaks remain.
Coffee soak- Pour the cooled coffee into a shallow bowl and stir in the remaining alcohol, if using.
500 g Espresso or strong coffee, 2 - 3 tbsp Alcohol - dark rum, brandy
Assemble the Tiramisu - Dip each ladyfinger quickly into the coffee, just a second or two, then place them in a single layer in your baking dish. Spread half the mascarpone mixture over the top. Add another layer of dipped ladyfingers, then spread the remaining mascarpone mixture evenly over them.

Chill - Cover the dish and refrigerate for at least 6 hours, preferably overnight, so the layers can set properly.
Finish and Serve - Just before serving, dust the top generously with cocoa powder. Slice and serve chilled.
