Make the Chocolate DoughIn a food processor, add the all-purpose flour, almond flour, cocoa powder, sugar, and salt.Pulse a few times to combine. Add cold cubed butter and pulse again until the mixture looks like coarse crumbs.Add the egg yolk and vanilla extract, and pulse until the dough just begins to come together — don’t overmix.

BakePlace cookies on prepared trays and bake for 10–12 minutes, just until the edges are set.Let them cool on the tray for 5 min, then transfer to a rack to cool completely.
