Cut - Add the cold butter into the flour mixture using a pastry blender or a fork until it resembles a coarse breadcrumb consistency.

Cheese - Add the Parmesan and cheddar cheeses. Combine, but do not overmix. Then, add the buttermilk and combine well with a spoon or spatula.
1 cup Cheddar cheese, 1/4 cup Parmesan Cheese, ¾ cup Buttermilk
Fold - Using a rolling pin, lightly roll the dough. Fold the dough into thirds, bringing the two sides over the center. Then, the top and bottom sides into the middle. Just like closing a box!! Repeat this once more or twice more to create more folds.
Cut - Roll the dough again to about 3/4-inch thickness, and using a 3-inch cookie or biscuit cutter, cut about 6 to 8 biscuits.
Finish - Line the baking tray with parchment paper or silicone. Place the biscuits on the prepared baking tray. Brush the tops of the biscuits with milk or melted butter.
Bake for 15 to 17 minutes until the top is lightly golden brown. Remove from the oven and cool on the tray for 5 minutes.
Serve warm.
