This homemade strawberry jam is simple and easy to make. It uses less sugar and no pectin or artificial flavoring. And, it takes less than 30 minutes to make. Save it in the fridge or can these jams for the whole year.
Prepare - Place two small ceramic plates in the freezer for testing the jam later. Wash, hull, and roughly chop the strawberries.
Combine - Add the strawberries, sugar, lemon juice, and salt to a large heavy-bottomed saucepan. Stir well. If time permits, let the mixture sit for 30 minutes so the strawberries begin releasing their juices.

Cook - Place over medium heat and cook, stirring occasionally, until the sugar has completely dissolved and the strawberries release plenty of juice.
Boil - Increase the heat and bring the mixture to a boil. Boil for about 2 minutes, stirring frequently, then reduce the heat to maintain a steady simmer.
Thicken - Simmer for 20 to 30 minutes, stirring frequently to prevent the jam from catching on the bottom. Mash the strawberries as they soften for a smoother jam, or leave some pieces intact for a chunkier texture.
Test the set - Spoon a teaspoon of jam onto a frozen plate. Wait 1 to 2 minutes, then push it gently with your finger. If it wrinkles and doesn't immediately flow back together, the jam is ready. If not, cook for another 2 to 3 minutes and test again.
Finish - Remove from the heat. Stir in the optional butter to help disperse foam, or skim any foam from the surface.

Jar - Carefully ladle the hot jam into clean, warm jars. Cool, cover, and refrigerate.
