Prepare the Chicken: Place the chicken breast-side down on a cutting board. Cut along both sides of the backbone using kitchen shears to remove it. Flip the chicken over and press firmly on the breastbone to flatten the chicken.

Make the Marinade: In a medium bowl, combine the garlic powder, onion powder, paprika, coriander powder, thyme, rosemary, honey, mustard paste, molasses, salt, pepper, lemon juice, and olive oil. Mix until well combined.
