1tbsp(15ml)Ponju or Koji sauce
1tspChili oil (adjust to taste)
1smallGarlic cloveminced / grated
1inchGingerfreshly grated
¼tspSaltto taste
½tspBlack pepper powderto taste
1tspLemon zestoptional
Sliced shallots for garnish
Microgreens for garnish (optional)

Instructions
Make the Dressing: In a small bowl, whisk together the olive oil, sesame oil, mirin, soy sauce, koji sauce, minced garlic, grated ginger, chili oil, salt, and pepper. Add any optional ingredients you want. Pour the dressing on a serving platter.

Prepare the Salmon: Slice the salmon thinly against the grain and arrange it on the serving platter.
