Instructions
Preheat the oven to 375°F /190°C/ Gas Mark 5. Lightly grease a baking dish with olive oil.
Wipe the mushrooms well with a damp cloth. Remove stems and gills (the black part on the underside) to create space for stuffing. Chop the mushroom stems finely and add them to the filling later.

In a large skillet, heat some olive oil over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes. Add the ground meat to the skillet and cook until browned and cooked through, breaking it up with a spoon as it cooks. Season the mixture with salt, pepper, and chopped parsley. Remove from heat and let cool slightly.
