This healthy take on the viral smash taco skips the cheese and mayo — instead, we’re using a Mexican-spiced beef base, fresh toppings, and a tangy yogurt dressing.
Prepare the beef filling: In a skillet over medium heat, sauté the onion in olive oil until soft, about 3–4 minutes. Add the garlic and cook for another 30 seconds. Add the ground beef, cumin, paprika, chili powder, coriander, salt, and pepper. Cook until browned, about 6–8 minutes. Stir in lemon juice and chopped cilantro. Remove from heat and let cool slightly.
1 lb Lean ground beef, 1 small Red onion, 2 large Garlic cloves, 1 tsp Ground cumin, 1 tsp Smoked paprika, ½ tsp Chili powder , ½ tsp Ground coriander, Salt and pepper to taste, 2 tbsp Fresh lemon juice (or lime juice), 2 tbsp Chopped fresh cilantro, 1 tbsp Olive oil
Make the yogurt dressing: In a small bowl, whisk together Greek yogurt, lemon juice, garlic powder, honey (if using), salt, and pepper. Set aside.
½ cup Greek yogurt, 1 tbsp Lemon juice, ¼ tsp Garlic powder, ½ tsp Honey (optional), Salt and pepper to taste
Assemble the tacos: Lay tortillas flat on a clean surface. Press a small handful of the beef mixture onto one half of each tortilla, pressing it thin and even.
Cook the tacos: Heat a non-stick or cast-iron skillet over medium-high heat. Place each tortilla meat-side down and press gently with a spatula. Cook 3–4 minutes until beef is crispy and browned. Flip and cook 30–60 seconds to toast the other side. Remove and repeat.
Top and serve: Add diced cucumber, tomato, avocado, onion, and a drizzle of yogurt dressing over the crispy beef side. Garnish with fresh cilantro and serve with lime wedges.
6 small Flour tortillas, 1 small Cucumber, 1 small Tomato, 1 med Ripe avocado, 2 tbsp Red onion, Fresh cilantro for garnish, Lime or lemon wedges
