450g(1lb)Pappardelle pasta

Brown the beef: Heat a large skillet over medium-high heat. Add the ground beef and cook until nicely browned, breaking it into smaller pieces as it cooks.
Add aromatics: Add the onion and cook for 3 to 4 minutes until softened. Add the garlic and cook for 30 seconds.
Cook the tomato paste: Stir in the tomato paste and cook for 1 to 2 minutes until slightly darkened. Add the basil, parsley, salt, and pepper.
Simmer: Add the beef broth, scraping up the browned bits from the bottom of the skillet. Simmer for about 5 minutes.
Cook the pasta: Meanwhile, cook the pappardelle in generously salted water until just al dente. Reserve 1 cup of pasta water, then drain.
Finish the sauce: Reduce the skillet to low heat. Stir in the cream, Parmesan, and Emmental until melted and creamy.
Combine: Add the pasta and toss until well coated. Add reserved pasta water, a little at a time, if needed to loosen the sauce.
Serve: Garnish with fresh parsley and additional Parmesan. Serve immediately.
