2tbspOlive oil
1largeRed Spanish onionsfinely chopped
2medCarrots finely chopped
2medCelery stalksfinely chopped
3largeGarlic clovesthinly sliced
1½lb(680g)Ground beef(20% fat)
4 - 6oz(100g)Ground pork or pancettaoptional
2tspItalian seasoning
2medBay leaves
28oz(800g)Canned crushed tomatoes
4tbsp(60g)Tomato paste
¾cup(180ml)Red Wine white wine if you prefer
½ cup(120ml)Beef brothor water
2tbspFresh thymeor ½ tsp dried thyme
¼cup(20g)Parmesan cheesefreshly grated, extra for serving
½tspKosher salt
½tspBlack pepper powder
2tbspFresh basil leaves chopped or ½ tsp dried (more for garnish))
½cup(120ml)Whole milk Optional
Instructions
Sauté - In a Dutch oven or heavy-bottom saute pan, add olive oil. Sauté garlic, carrots, celery, and onions until translucent.
2 tbsp Olive oil, 1 large Red Spanish onions, 2 med Celery stalks, 2 med Carrots , 3 large Garlic cloves
Brown - Then, add ground beef and pork. Break the meat into smaller pieces with a wooden spoon. Sauté until there is no more pink meat. Add the Italian seasoning and bay leaves. Then, continue to cook on medium heat and break the meat apart.
1½ lb Ground beef, 4 - 6 oz Ground pork or pancetta, 2 tsp Italian seasoning, 2 med Bay leaves
Sauce - Add the canned tomatoes and tomato paste. Season with salt and pepper, followed by the wine. Cook on medium-high heat for 2 minutes. Then, add beef broth or water, fresh thyme, and basil. Finally, add the parmesan cheese.
28 oz Canned crushed tomatoes, 4 tbsp Tomato paste, ½ cup Beef broth, ¾ cup Red Wine, 2 tbsp Fresh thyme, 2 tbsp Fresh basil leaves chopped , ¼ cup Parmesan cheese, ½ tsp Kosher salt, ½ tsp Black pepper powder
Simmer - Cover and cook for an hour on low heat, stirring every 15 minutes. Add broth or water if necessary to prevent it from sticking to the bottom of the pan. Taste and adjust the seasoning.
Optional - If using milk, add it now and turn the heat off. Give it a good stir until you are ready for the pasta.
