Instructions
Sauté: Heat olive oil in a large Dutch Oven Pot over medium heat. Add onion, carrots, and celery. Cook for 5-6 minutes, stirring occasionally, until softened. Add garlic and sauté for another minute.

Add the vegetables and spices: Stir in the red bell pepper, tomatoes, and green beans. Sprinkle with paprika, cayenne, cumin, and ground ginger. Cook for 2-3 minutes to allow the spices to bloom.

Add cabbage and broth: Add the shredded cabbage and pour in the broth. Stir well to combine. Toss in the rosemary sprigs and thyme leaves.
Simmer the soup: Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes or until the vegetables are tender.
Season and finish: Remove the rosemary sprigs. Season with salt and pepper to taste. Stir in the chopped parsley. Add some freshly squeezed lemon juice.
