Vinaigrette
¼cupOlive oil
¼cupRed wine vinegar (or balsamic vinegar for a sweeter touch)

4med Beets(preferably a mix of red and golden for color variation)
1largeSpanish onionthinly sliced
4ozGoat cheesecrumbled
¼cupFresh parsleychopped
¼cupToasted walnuts or pecans for added crunchoptional
Instructions
Roast beets - Preheat oven to 400°F (200°C). - Trim the beet greens and wash the beets thoroughly. Wrap each beet individually in aluminum foil. - Place wrapped beets on a baking tray and roast for about 45 - 60 minutes or until a knife can slide easily into the center. - Once roasted, remove from the oven and let them cool. Once cool enough to handle, peel the skin off using your fingers or a paper towel.- Slice beets into 1/4 inch slices or cut into wedges or thin slices.

Vinaigrette - Combine all the ingredients in a jar and shake to combine well.
¼ cup Olive oil, ¼ cup Red wine vinegar , 1 clove Garlic, ¼ tsp Salt , ¼ tsp Black pepper, 2 tbsp Dijon mustard
Macerate - Add a few tablespoons of vinaigrette to the onions and the beets separately and leave to macerate for 15 minutes. Then, drain and discard the juices. Set aside. Pro tip - Macerating the onions will remove the pungent juices from the onion.
1 large Spanish onion
Assemble - Combine the beets, onions, and parsley in a bowl. Crumble the goat cheese all over the salad. Toss some chopped toasted nuts for added crunch. Pro tip - Add more dressing if necessary.
