Instructions
Prepare - Start by preparing your vegetables. Dice the onions, celery, and carrots finely. Mince the garlic and set it aside.
Sauté - Add olive oil to a large pot over medium heat. Sauté the onions, carrots, and celery. Cook for 5-7 minutes until the vegetables are softened and the onions translucent. Add the minced garlic, bay leaves, tomato paste, and spices and cook for 2-3 minutes, stirring constantly.

Beans and Broth - Add the red and white beans and broth to the pot. Stir everything well to combine. Season with salt and pepper. Add the parsley and mix well.

Serve: Serve the soup in individual bowls, garnished with a sprinkling of fresh chopped parsley on top.
