Prep Apples - Start peeling, coring, and dicing your apples. Aim for slices that are even so they cook uniformly.Pro tip - Cut the apples into similar size pieces so they cook evenly.

Combine - Combine all the filling ingredients with the diced apples in a saucepan. Use a spatula to coat the apples with the spices and cornstarch. Pro tip - I did not use water in the video because I wanted a thicker consistency for my apple pie filling.
1 tbsp Lemon juice , ¼ tsp Salt , 1 tsp Ground cinnamon , ½ tsp Allspice powder, ¼ tsp Nutmeg , ¾ cup Brown sugar , 2 tbsp Cornstarch, ¼ - ½ cup Water
Cook - Cook the filling over medium heat until they're just tender and reduced by almost half. The sugar will melt and the cornstarch will thicken the mixture.Pro tip - You don't want apple mush, okay?
Cool and Store - Let the mixture cool down before you use it in your pie. If storing, make sure it's in an airtight container.
