Ground Beef Soup
This ground beef soup is hearty and wholesome, perfect for the cooler weather. Made with ground beef, potatoes, carrots in a tomato-based broth. Not loaded with cheese but yet rich and creamy. The best part, it takes only 15 minutes to make.

Instructions
Saute ground beef in oil for 2 minutes until browned
Add the garlic, onions, carrots, celery – saute 2 minutes more
Then add the potatoes – saute a minute
Season with salt and pepper
Add the tomato paste, bay leaves, and stock
Cook for 8 minutes until potatoes are tender
Then add the parmesan, cheddar, parsley
Taste and adjust seasoning and consistency. If necessary add a few tablespoons of water or stock
Serve with toasted bread
