Fruits - Place the raisin and cranberries in a microwave-safe bowl with ½ cup water and heat in the microwave for 30 seconds. Tip - Heating it will make the fruit soft and juicy. Drain and set aside.
Nuts - Chop the pecans or walnuts into smaller pieces. Set aside
Dressing - In a small mason jar combine the lemon juice, olive oil, and sugar. Season with salt and pepper. Close the lid and give the jar a good shake. Set aside
In a salad bowl, grate the carrots using the large side of the grater. Add the fruit and nuts, followed by the salad dressing.
