These delicious and creamy Mango Popsicle are simple, easy and effortless. Made with fresh or frozen mangoes, a few simple ingredients and a few hours of freezing to create this delicious summer Mango Ice Cream Pop.
2tablespoon(2tablespoon)Unflavored gelatinor agar agar
¼cup(50g)Sugarup to ½ cup - depending on the sweetness of the mangoes
Prevent your screen from going dark
Soak the gelatin in ¼ cup water and let stand for about 2 minutes.
Heat in the microwave for 30 seconds or on a double boiler.
Wash, peel and roughly dice the mangoes to a smooth pulp.
Add mango juice to the slightly warm gelatin.
Next, add in the mango fruit.
Add sugar - adjust for sweetness.
Blend the mixture until smooth.
If using -add yogurt now and blend some more.
Taste and adjust sweetness.
Pour into Popsicle molds.
Freeze for at least 3 hours or overnight.
To unmold just pour some warm water on the Popsicle mold overnight so it releases.
