In a saucepan, over medium heat, combine all the ingredients.
Let it come to an almost boil, then, immediately reduce the heat to a low simmer. DO NOT BOIL – you don’t want the alcohol to evaporate.
Let simmer on low for 15 minutes or up to 2 hours.
Taste and adjust sweetness. If necessary, add more maple syrup or honey.
Remove from the heat.
Strain through a fine-mesh strainer or cheesecloth.
Mulled wine is served warm (use heatproof mugs).
Use the ingredients in the mulled wine to serve as garnishes.
