Princess Cake Tutorial

A princess cake makes a perfect birthday cake for any little girl no matter what Disney princess she loves. While it is a sculpted cake it is one of the simplest and easiest cakes to create. Fondant designs with ruffles, frills, swags, and bows are the easiest additions to make a girls dream dress. The best part is that you can even get the little girl to be part of the making process.

  • Bake Cake in one 6" ball pan and one 6" round cake - see 30 plus layer cake recipes here
  • Cool cakes completely before decorating.
  • Prepare filling and frosting - see 30 plus frosting recipes here
  • Prepare simple syrup


  • Torte cake sphere in half
  • Brush each layer with simple syrup
  • Stack the cake layers on the cake board - spreading a generous amount of frosting between each layer.
  • Place in the fridge for 15 minutes so the layers do not move.
  • If you plan to use a doll with legs - hollow out the top end of the skirt making space for the doll legs (alternatively you can just use the top half of the doll body)
  • Then frost the cake with chocolate ganache or more buttercream - use a spatula to smooth the layers.
  • Chill the cake in the fridge for an hour of more so the ganache sets firm

Cover with fondant

  • Brush the cake lightly with water - wipe off any excess
  • Roll white fondant and cover the cake smoothing all around -
  • Cut off any excess.
  • Decorations - Billowing technique
  • Roll more white fondant - cut into squares or rectangular pieces
  • Pinch the two short sides as shown in the video.
  • Arrange each billow on the cake - front of the dress
  • Continue to make these until you have a tapered design from top to the bottom. As shown in the video.

Decorations - Ruffles

  • Roll a long strip of fondant about 4 inches in width.
  • Pinch or pleat the fondant as shown in the video
  • Use a rolling pin to press the center (length wayin. This will fuse the fondant as one
  • Cut the pleated strip from the center so you have two ruffles
  • Place these around the cake
  • Adjust the ends of the ruffles with the fondant billows placed earlier.

Decorations - Skirt

  • Roll some fondant strips in turquoise fondant
  • Stencil a pattern using gold luster dust as shown in the video
  • Cut the strip to the size needed for the skit.
  • Attach pinched on the top and flared over the skirt.
  • Decoration - Front Ruffles
  • Roll and cut two long strip of turquoise
  • Fold it to create pleats
  • Arrange in front of the skirt as shown in the video
  • Making sure to arrange all the previous fondant designs neatly.

Decoration - Swag

  • Roll a long strip of turquoise
  • Fold it to create pleats as shown in the video
  • Cut into smaller sections to create swags around the dress.

Princess Body

  • Wrap a plastic doll in cling wrap
  • You can use only the top half of the doll or insert the doll into the cake
  • If using only the top use a skewer to anchor the doll in place.
  • Cover the top of her body in with fondant - as shown in the video
  • Gently place the doll in place
  • Add a fondant belt for the doll to cover the seam between the body and skirt.
  • Add a fondant bow on the back.
  • Turquoise fondant can be used to create accents like bodice lines and sleeves.


  • To finish the dress add some dragees over each fondant billow
  • Small roses over each swag.
