- 1 cup Thick coconut cream see note above
- 350 grams Semi sweet chocolate chips
- 60 grams Butter 1/4 stick (vegan butter to make it vegan)
- 1 cup Desiccated coconut
- 1/2 tsp Coconut extract optional
- 1 tsp Vanilla
Place the thick coconut cream (see notes above) in a bowl
Add chocolate chips to the coconut cream
Melt in the microwave for a minute or more until completely melted.
Add vanilla and coconut extract
The messy job
Place the desiccated coconut in a plate or bowl to dust the truffles.
Use a melon scoop or two spoons to scoop some of the cold mixture in your hands
Gently but quickly roll the mixture into a ball.
Then place it the desiccated coconut - roll is so it coats evenly.
Place on a clean plate and continue with the rest of the truffles.
Chill the truffles again until firm
