Ingredients

Basic Batter Ingredients

  • 228 grams Unsalted butter
  • 200 grams Sugar
  • 250 grams All purpose flour
  • 1 1/2 tsp Baking powder
  • 1/4 tsp Salt
  • 3 Eggs large
  • 2 tsp Vanilla

Extra Ingredients

    For Vanilla Cupcakes

    • 2 tbsp All purpose flour
    • 1/4 cup Milk

    For Chocolate Chips Cupcakes

    • 2 tbsp All purpose flour
    • 1/4 cup Milk
    • 1/4 cup Chocolate chips

    For Chocolate Cupcakes

    • 2 tbsp Cocoa powder
    • 1/4 cup Hot water
    • 1 tsp Coffee

    Instructions

    Prepare

    • Preheat the oven to 170 C/340 F.
    • Prepare cupcake pans with baking liners.

    Basic Batter

    • Sift flour with baking powder and salt. 
    • Cream butter and sugar until light and fluffy.
    • Add vanilla and eggs one at a time.
    • Next, add in the flour and mix to combine. 
    • This is your basic batter.

    Divide Batter into Three

    • Split this batter into three similar bowls approximately.
    • I use similar bowls so I can approximate.
    • You can use a weighing scale if you want to be precise but it's not necessary.

    Bowl One - Vanilla Cupcake

    • Add 1/4 cup milk and 2 tbsp flour.
    • Mix well.
    • Divide into prepared cupcakes liners.

    Bowl Two - Chocolate Cupcakes

    • In a separate bowl add 1/4 cup hot water, 1 tsp of coffee and 2 tbsp Cocoa powder.
    • Stir and let cool.
    • When cooled pour into the batter.
    • Mix well.
    •  Divide into prepared cupcake liners.

    Bowl Three - Chocolate Chip Cupcakes

    • Add 2 tbsp flour, 1/4 cup chocolate chips, and 1/4 cup milk.
    • Mix well.
    • Divide into prepared cupcake liners.

    Bake Cupcakes

    • Bake the prepared cupcakes for 20 to 22 minutes until a skewer inserted in the center comes clean.
    • Cool in the pan for 5 minutes then on a wire rack until completely cooled.
    • Always cool cupcakes completely before you cool them.
