Ingredients

Filling

  • 250 grams Ground meat beef, turkey or chicken thighs
  • 1 tbsp Cooking oil
  • 1/2 Onion chopped fine
  • 1 tsp Garlic minced
  • 1 tsp Ginger grated
  • 1/2 tsp Cinnamon powder
  • 1/2 tsp Cumin powder
  • 1/4 tsp Paprika powder
  • 1/4 cup Cilantro / parsley chopped
  • 1 tbsp Lemon juice
  • Salt and pepper to taste
  • 1/2 Egg - egg wash
  • 1 tbsp Sesame seeds/Nigella seeds to sprinkle optional 

Instructions

  • Ensure the puff pastry is thawed but kept cold in the fridge.

Prepare the Filling

  • Saute onions, ginger, garlic in one tbsp canola oil.
  • Add ground meat and spices.
  • Stir the meat well with a spatula to remove lumps.
  • Cook on medium heat until all the liquid is absorbed, breaking as many large chunks of meat.
  • Add lemon juice and chopped herbs.
  • Taste and adjust seasoning  - set aside to cool.

Fill the Pastry

  • Roll chilled puff pastry into a square about 16 x 16 inches.
  • Cut the square into 12 equal squares.
  • Place a tablespoon or more of filling a little off center on each square.
  • Brush egg wash on the edges and fold over.
  • Use the tines of a  fork to seal and mark edges so they look nice as well as won't open during baking.
  • Place the pastry on a baking tray and into the fridge to chill.

Bake the Puffs

  • Preheat the oven at 200 C / 400 F.
  • Brush the meat puffs with egg wash and sprinkle the sesame seeds.
  • Bake in the preheated hot oven on the middle rack for about 18 to 20 minutes until golden and puffed up.
  • Cool on a wire rack for at least 10 minutes before you serve.
  • Serve hot - goes well with ketchup.
