Preheat the oven at 170 C / 340 F.
Swift the Flour, Baking soda, spice mix, and salt.
Cream the butter and sugars until light and fluffy.
Add in the Eggs one at a time.
Followed by vanilla.
Add the oats.
Then the flour mix.
Followed by the Nuts, Raisins and chocolate chips (if using).
Stir well to combine.
Scoop or drop spoonfuls on to a baking tray.
Bake in a preheated oven at 170 C/340 F for about 8 to 10 minutes or until lightly golden.
Remove and cool on a baking tray.
Store in the cookie jar for up to 2 weeks.
