This virgin pina colada is a beautiful twist and variation on the classic Pina Colada with the addition of chia seeds minus the alcohol. A simple, easy and refreshing combination of tropical flavors from the crushed pineapple, coconut cream, and honey.  Works as a perfect breakfast, mid-day treat or a healthy dessert option.

Ingredients

  • 2 cups Crushed pineapple
  • 1 cup Coconut cream
  • 2 cups Crushed ice
  • 1 tbsp Chia seeds
  • 1/2 cup Water or coconut milk
  • 1 tbsp Honey or more 

Instructions

 

  • Soak the chia seeds for 10 mins in water to let it bloom
  • Save a few crushed pineapple aside for garnish
  • In a blender add remaining crushed pineapple, coconut cream, crushed ice. 
  • Blend until smooth. 
  • Taste and adjust sweetness with honey
  • Add the chia seeds and give it one quick wiz in the blender. 
  • Pour into individual smoothie glasses 
  • Enjoy.
