Grate the potatoes and squeeze all the excess water from the potatoes.
Combine all the rest of the ingredients to the grated and drained potatoes.
Drop spoonfuls onto a skillet with oil and cook on medium-high until lightly golden about 3 to 4 mins per side.
Remove the latkes onto a clean paper towel to remove excess oil.
