Tools I use (Cake & Kitchen)
The internet has lots to offer; more than one tool for the same job. I know tools make life a lot easier but picking the right tool for the right job is key.
When I just started off I kept buying everything people recommended! Cake toys that I did not need!
True – there are some that I have still not opened out of their original packaging cause I have had no use for them. I got them just because some cake person I admire has them.
Tools Vs Skills.
I know that the internet has lots to offer. More than one tool for the same job. I know tools make life a lot easier but the truth still remains that your talent is what is key. So if you got a tool that a cake artist you admire is using and you still don’t get the same results – don’t go buying another tool. Collecting more tools is not the answer there; right?
What you need to do is practice! Yes, practice more and work on your skills. Perhaps use that money to buy a class that shows you how to achieve that results. For example, if you want to learn modelling don’t go on a shopping spree for modeling tools. Instead take a class and learn that skill; and often you will see that if you spend time practicing which tool you use won’t matter much.

So this is for those of you that are just starting off. What should you buy and what you absolutely cannot live without.

First – you need to make sure you have a good set of baking pans. The right sizes so you can take orders more than just that 8″ round you’ve been using all your life. I started off with two sets of these Baking Pans from Wilton. They are a perfect place to start. I would highly suggest buy two sets of the round pans so that way you do not do to much torting and life as a beginner will be a little easier.
You will need a good set of cookie baking trays to bake those gorgeous cookies and at least one cupcake tray if you plan to take cupcake orders
You can start with two sets of the round cake pansin common sizes then move on tosquare baking pans , Oval baking pans, Hexagon baking pans. Your type of orders will determine if you need the rest of the baking pans but the round baking pan is a good place to start.
Fondant and Gum paste Rolling Pin
If you are going to be working with Fondant and gumpaste then you need to have a good rolling pin. One that is leveled. I have purchased so many rolling pins until today specially for fondant but the truth is you will often see me use the basic pastry rolling pin. Why? I am so use it to I work more efficiently with it. As a beginner I would suggest you try this Fondant rolling pin and this gum paste rolling pin. The gumpaste rolling pins usually come with guides to help you with thickness.
Fondant Smothers and Acetate smothers
Truth be told you can smooth fondant with just your hands but hands can give you finger prints so a pair of good fondant smothers is a must. And those acetate smothers are a blessing. God bless the person who invented the use of acetate smothers to get sharp edges on fondant.
A few must have basics –
these are somethings you will need every time you work on a cake. Straight edge spatula and offset spatula. A Levelerand aright angle. Bench scrapers. I have the 10 inch bench scraper, an exacto knife,Of course Bubble Straws for doweling the cake and awooden dowel for the center dowel.
Craft Mats / Fondant mats
I use a Craft Mat to roll my fondant and do all my cake work. Personally, I find this to be better than working on the table because it’s non stick.
People swear by thesefondant rolling mat because it had measurements. I do use one for my pastry but I still prefer my craft mats bigand small for fondant and gum paste
A Turn Table
This is very helpful to a beginner as it let’s you turn your work around easily so you can work with a 360 degree view of your work. Nothing is worst then knowing you finished decorating but the cake is not symmetrical on all sides. (don’t ask me how I know that). I have three turn tables – Why? because I keep buying things people recommend. For a start – if you can afford only one then this simple and basic turn tablewould be a good one to have. If I could go back and buy one today I’d buy this aluminium turn table. Kasey Lacey came out with this new fondant turn table that many pros are using now a days. It can be extended and is much more sturdier. I have not used it so cannot give you a personal recommendation.
So those are the basic that you would need to make your cake life a bit more easy. Other than that you want to have some basic decorating things.
Modeling tools :
These are not just for modeling figures but also for creating textures. I use to have a huge collection of many many tools that now are in the corner unused. Why? Because I replaced them all with these sugar shapers. If this was around 5 years ago I’d save a lof of money. These sugar shapers are not cheap but they are all you need because they are so versatile. The come in a set of four, soft tip, firm tip, Mini soft tip and Mini firm tip. Sugar flowers & Cutters
I have a draw full of molds, veiners, drying tools for my flowers because I specialize in flowers.
However, if you are just starting out I suggest you buy this basic set ofgum paste flower cutter from wilton.. It has a good variety.
You will also needball tools, multipurpose flower veiners and gum paste drying tools can be made at home with bowls and foil but I use this and this and this. And of course you want some basic shape cutters like the round, square and ovals. I’d recommend go with either Ateco or Fat Daddido.
Some silicon molds and more essentials
The options for silicon molds can drive you insane for choices recently. I have done so much of impulsive buying when it comes to molds myself. Honestly I never regret it cause they do make life so much easier.
The best quality molds to me are from Marvelous Molds. But First Impressions, Katy Sue, Karen Davies are a few know brand in the market. I wont’ lie while I’d love to be able to afford them exclusively I do buy a few non branded ones in the market too.
As a beginner I’d suggest just these until you go on an impulsive buying spree yourself. The Martha Stewart Alphabet mold,
Embossing Mat and Rolling Pins
Let’s talk Airbrush.
I will make a detailed post about the airbrush sometime soon but here is the what I have. I started off with this five years ago. Zero Point airbrush. It still works and it has given me great value for money. But I still do not recommend it as it does not do metallic paint.
I then bought the Dinky Doodle Airbrushand my airbrush life has since then been nothing but fun. I have the Pink one so its’ my absolute favorite. You can buy then in US as well as in the UK.
I do have a Magic Colours Airbrush and it’s amazing. I love using it so much I made a video on how to use it too.
The two other that come highly recommended are Clairella Airbrushesand Cassie Brown Airbrush.

Russian Piping Tips
If you are into buttercream cakes then the trendies at the moment in buttercream are these Russian Piping tips. I have a few videos on you tube that show you how to use these Russian Piping tips. The buttercream flowers it creates are absolutely amazing from tulips and roses. I have a set of 8 Russian piping tipsbut the choices are endless.
Cake Lace and Molds.
The latest tend that is getting every body so excited is the Lace!! Everyone wants lace on their cake and the option for cake lace are endless. One of my favorite to use is Cake Lace. I got it while I was in the UK last and loved using it. If you have an optoin for ready made then Cake lace would be a good one to start. It works well in humid conditions too unlike sugar veil that stays sticky with humidity.

Let’s talk lace mold. Yes, the best in the market again is from Cake Lace but I won’t lie I have a few that I got on amazon that are non branded. Some of my favorite from Lace Molds is thisand thisand this. I have quite a collection but I’m going to let you go and explore the options for yourself.
Gravity Defying cakes
This is the latest and most trendiest currently. Making gravity defying cakes. For some of use structures are the most difficult to create and so there are things like Cake Frame.

Gum Paste Modelling of Figures.
This is a soft spot right now. Almost everybody want figures on their cakes. While it can take hours and skills to create one, silicon molds are making it more affordable and effortless.Face mold,, face molds, body molds, baby molds
