One Bowl Chocolate Cupcakes
Have you tried the One Bowl Vanilla Cupcakes yet? Well, it’s my go to recipe when I want quick cupcakes for the kids. Especially when you have kids play dates and such.
Some how kids think that because Aadi and Rhea’s mom is a cake lady, we have loads of cake just lying around. While sometimes it may be true, most other times – I just toss the craps in a zip lock back and into the fridge.
I prefer to make fresh cupcakes for the kids, you know!! Some times One bowl Vanilla and sometime One Bowl Chocolate Cupcakes. They are so easy to make.
125 grams / 4 oz. Sugar
125 grams / 4 oz. – Butter
100 grams /4 oz. Cake Flour
25 grams / 2 tbsp. Cocoa Powder
2 large eggs
1/2 tsp. Baking Powder
½ tsp. Baking Soda
¼ tsp. Salt
¼ cup Buttermilk OR ¼ cup milk + 1 tsp. lemon juice.
Preheat the oven 160 C/320 F
Place all ingredients in a bowl.
Mix on medium speed until a smooth batter is obtained.
Pour in cupcake cases
Bake for 20 to 22 minutes until skewer inserted in the center comes clean.

Now What is the the secret to one bowl cupcakes; be it Vanilla or Chocolate?
The temperature of your ingredients. Yes!
If you butter is not soft it will not incorporate well in the batter. And if it too melted it will change the formula or the batter. Melted butter and softened butter are not the same.
If your eggs are cold it will make the butter cold. and can split the batter again changing the formula of your recipe.
So make sure all your ingredients are at the temperature they are suppose to be when you start baking.
- Mixer or Bowl - You can use your Kitchen-Aid/K-Mixor just a bowl
- Whisk/ Wooden Spoon & Spatula
- Cupcake Pan
- Cupcake Liners
- Cookie Scoop / Ice Cream Scoop
- Baking Tray
- For the Cupcakes
- 125 grams / 4 oz. Sugar

and here’s the video – Now you can see in the video below I baked them in simple cupcake liners for a quick snack but you can bake them in fancy cupcake liners and decorate them as I have here too!
