Baked Chicken and Vegetables
This baked chicken and vegetables is a one pot meal. Very quick, simple and easy baked dish.
Now, when I say quick I mean you barely have to do much but it does go into the oven for about 45 minutes to an hour..
I usually make these on days when I have no time to do hands on cooking. I rather have the oven do the work while I’m finishing off with my cake orders. A dish with meat & veggies is perfect, serve it with some fresh bread to dip in the sauce.

Place the chicken and veggies in a baking dish. Sprinkle with salt and pepper.
In a bowl, combine
1 tbsp mustard paste
1 med garlic clove minced

1/2 tsp cayenne or a few drops of Tabasco.
Stir well to combine.
Pour over your chicken and veggies in the baking dish.
Mix well and ensure all the chicken piece are well tuck under again.
Cover with a foil and place in a preheated oven at 180C/360F for about 40 minutes.
Uncover and continue baking for a further 10 minutes basting with the pan juices.
